		<description>How to get more from your “Side Burner”

One of the issues when using a side burner is that the low flame is too powerful to “slow cook” or “simmer”, 
so a trick we use is: 

Return the control knob to “high” then slowly turn control knob towards the “off” position (do not switch off). Whilst doing this, keep an eye on the flame, and when the flame reaches the desired height, release the control knob and the flame will remain constant at this perfect position to slow-cook or simmer.

Now let’s test our new technique with a simple side-dish of beans and tomatoes, and a garlic sauce.

1)	Beans &amp; Tomatoes – To be served with any Fish meal.

Using your side burner, in a large saucepan add a good dash of Olive Oil; add a table-spoon of freshly chopped Garlic, Ginger &amp; Chilli, cook till golden brown. Add 6 large diced ‘ripe’ tomatoes, a glass of white wine and a pinch of sugar, allow to ‘simmer or slow cook’ for about 15 to 20 minutes. 

After you have done the ‘slow cooking’, return the side burner to the high position. Add a large hand full of fresh green beans; continue to cook until beans are cooked.

2)	Garlic Sauce – A great basting Marinade for Red meat, Chicken &amp; Fish.

-	Set side burner to a high heat.
-	Melt 100g of butter &amp; 35g minced Garlic in a saucepan.
-	Cook until Garlic softens and turns a golden brown.
-	Add 60mls of Soy sauce, 60mls of Lemon juice, a pinch of Black pepper &amp; Cayenne pepper.
-	Simmer for 5 minutes.</description>
